dinner diva leanne elyEvery morning, even the mornings when I have too much on my plate, I wake up thankful for a fresh start and a new day.

I know there is coffee in the kitchen on the ready – I just have to push the button and make it happen.

The house is quiet and dark. I know what is ahead (mostly) as my calendar is open on my desk with the day’s tasks written out.

I’m thankful for this morning ritual and the calm it brings to my day.

I hope your day is bright and wonderful and that you wake up mindful of the fact that you have a fresh, new day and brand spanking new start. Each day you have that, if you choose it with a thankful heart!

And here’s a breakfast recipe that will help make your mornings brighter!

 

Smoked Salmon Asparagus Scrambled Eggs

Ingredients:

  • 1/2 pound smoked salmon, chopped
  • 1 cup asparagus, chopped
  • 10 eggs
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • sea salt and freshly ground black pepper to taste
  • 2 tablespoons coconut oil

Instructions:

  • In a large bowl, whisk together all ingredients except coconut oil.
  • Heat coconut oil in large skillet over medium high heat, pour egg mixture into skillet once oil melts. Cook for 3 to 5 minutes, stirring regularly, until eggs are fluffy and firm. Serve hot.
